OK i'll do that!Hopefully you can go out and gather eggs frequently during frigid temps ...that's what I do.
I use bobbi-j's criteria for eating cracked eggs myself...and would never sell a cracked one.
Examine the eggs closely right away when gathering, they can crack slightly then the crack can close back up.
I do let my customers knows that the egg may have frozen, but not cracked,
which can lead to some funky texture when frying or poaching,
but they are fine for scrambling or baking.
