Are the eggs edible from ALL chicken breeds?

All eggs are edible, including duck & goose (and quail). There may be slight differences between breeds, but more differences depending on diet and housing. (Happy birds make tastier eggs IMHO ~ ~ !)

We have 14 hens, each a different breed. If I served you eggs from our White Face Black Spanish and our Jersey Black Giant, you wouldn't be able to tell the difference in taste. Your homegrown eggs will taste better than any other on earth.

The eggs that are not good to eat... any eggs that have cracks in the shell when you gather them. Instead, feed them back to the hens.

Eggs from ducks and geese may taste different from chicken eggs, but I think that is partially because of differences in their diets from chickens.

I work for a university and often host guests from our counterparts around the world. A woman from Denmark and I were having lunch together and I was telling her about having city chickens. She laughed and told me that her neighbors across the street from her have ostriches. Every once in a while they'll call and ask if she wants an egg.

Just one.

The caveat is that she must bring a large bowl because they don't give her the shell. Apparently the shells are quite valuable and are sold to people who decorate them. She'll run across the street with a salad bowl to pick up her single egg. Then she parses it out into individual servings in baggies and freezes the egg.

We bought an ostrich egg at a farm last spring. It tasted just like a chicken egg. The lady sold them for $20 for just the shell, $25 for the whole egg. It was like two dozen eggs inside.
 
I had an emu egg once roll off the counter and smash on the floor. What a mess and for some reason raw egg makes me gag. I was getting the heaves just looking at it (and again just writing about it!) so my perfect solution was to go to the door and whistle up a couple of dogs

For future reference I won't feed large amounts of raw egg to a dog with a very fluffy butt,

, but even cleaning that up was preferable to me than cleaning up egg.
