Are these Ameraucana's, Easter eggers, or araucanas?

As to all the other above info, it is sad but true. The question I think you should ask yourself is not whether you "can" show your birds but rather whether or not you "should" show them and "why" you would want to.

Since EE's are not a recognized breed by the APA there is really no reason to show them as you are not competing with any authorized standard. If on the other hand, you want to enter the local county or state fair where the standard for judging a bird simply relies on which bird catches the judges eye the most , and you'd like to see if your birds have a shot at that, then I say by all means go for it. I would only suggest that you not misrepresent your birds as "Ameraucanas".
