I'm having a super hard time determining what a male saddle feather looks like. Can someone maybe explain this like I'm five? Or is 8 weeks too young to tell?

Two chickens:

Brown chicken (they're not all named)

Male saddles wouldn't be in at 8 weeks. More like 12 weeks or later. They are the slender pointed feathers a male chicken gets that fall on either side of the lower back, just in front of the tail.
Thank you. It's fun to guess based on their behavior, but honestly they've all started sizing each other up, I just want to be sure to separate the boys out before there's any hassle.

That's a good idea. Behavior at that age isn't really helpful in determining sex. Pullets can be just as rowdy as cockerels.
