The industry feels that consumers frown upon finding a dark pigmented pin feather, and as almost everyone who has ever prepped a supermarket bird for the oven knows, there are always a few pinfeathers left in the bird.
The other way I could interpret your question is "Is there any purpose for a white turkey other than as food?" -- Sure, many people keep them as pets.
