At what ages are fryers vs stewing hens

Don't know if this is the right place for this question. We have decided to cull a couple of our laying hens that are mean trouble makers. They are 1 yr old (Australorp) and 2 yr old (Barred Rock). I'm assuming the 2 yr old is a stewing hen. But what about the 1 yr old?

Fryers are usually 5 to 8 weeks old. Stewing hens are a year or older.
