Ate my first quail

...and darned if that first bite wasn't delicious~ the tenderness surprised me! Not too gamey at all, and not like chicken. Very lean.

As harrowing as it was for me to go through my first processing, I'm already thinking of incubating some of those eggs my young hens have just started laying...lol.
 
How did you cook it? I processed my first ones last week. I ended up having to put them in the freezer, b/c everyone's schedule was conflicting, and we couldn't get together for a sit down supper. so now I am obsessing over how I am going to prepare my first birds.

I didn't do much! I marinated them 24 hours in Paula Deen's Vidalla Onion Peach Grilling Marinade I had picked up for my sister's bday, until I realized that she's allergic to onion! oop. Then I tossed in in the cast iron to cook in hot oil. Deboned it in the pan, and let the glaze reduce. Served over rice with a cucumbers thinly sliced in a vinegar/sugar mixture.
I guess I'm getting to the point of most of the others on this board that can see the bird and think 'Yum'! I was afraid I wouldn't be able to eat them at all, but once it was dinner, it was okay. Didn't eat much, but to be sure the leftovers won't go to waste!
 
For your next one, debone it, put a tbsp of feta or blue cheese in the center, roll the meat around the cheese, wrap in a thin slice of salt pork, and pan sear the pork crisp then finish on broil till the cheese just oozes....

Go with a red wine on this one.

I cook my quail very simply. I take put them in a baking pan, and take a can of cream of mushroom soup, add a little water and pour it over the quail and then bake them. It is so good makes me want to go out there and see if any of the quail in the eating cage are big enough yet, lol.
