Ate my first straight up duck egg today!

I really like them Hard boiled --- they will be easier to peel if you keep them for at least 2 weeks before you hard boil them.

I used to do about 2 duck eggs for a recipe that calls for 3 chicken eggs, but that's too much work to figure out. I just toss them in one for one, except for my really big eggs (my Appleyards and Saxonys lay 3 - 4 oz eggs!), I'd cut them back a bit.

When I first started eating duck eggs for breakfast, I could taste the difference too, but I scramble them with onion and peppers and a bit of cheese and they are great. Now that I've eaten them for years, I like them plain just fine too. I love them for baking.
 
We love our ducks, we could never eat duck meat but once we tried a duck egg we much prefer them over chicken eggs now
