It depends on your space etc. To determine how many you want.
If I was to start breeding them I would get 5 to ensure getting at least 1 hen and 1 rooster.

I would order from numerous hatcheries or breeders so that you get new blood

Space is if no issue I'll have to build a coop this winter and get them in the spring

Yeah. Then I would get from 2 different places. And the next year get some new ones also from a different place to ensure your 3rd year won't go downhill.
