We only had 1 chick hatch out of 7 eggs, he is 2 days d now. Can we leave him in the incubator for a week or so with food and water of course, instead of moving him into a brooder by himself

I'd move him to the brooder. He'd be just as lonely in the incubator as he would in the brooder. There's also more room for him to run around and stretch in the brooder. If he does get lonely, you can put a mirror and or stuffy (that can get dirty) in the brooder with him.

We are going to try and get some friends or it will end up being one spoilt chicken lol

Friends would be best! Flock animals need a flock hopefully you can get the little one a few friends.
