Back Of My Hen's Head Is Missing!! Will She Survive? What Can I Do?

clean with saline solution to remove any debris. (available at any pharmacy or you can make your own with 1 cup water and 1/4 teaspoon salt..cook to boil for a few minutes, let cool)

then disinfect with diluted Betadine or Providone Iodine..let dry, and apply regular neosporin and cover..gauze pad and stretchy gauze would work. do not use cotton..it leaves specks.
when healing is evident..Blue-Kote can be used..
watch for fever (hot comb and hot under wings, etc) or other signs of infection..
she may need Pen-g procaine or penicillin..

give electrolytes and vitamins..
extra protein, such as egg ..or baby food meat..etc..
keep warm, rested, quiet and protected..

how is the hen?

It depends what pain killer is used. The right pain killer can sometimes make all the difference in giving an injured/sick bird the will to eat and drink and thus gain strength.
