There is nothing better than a hot breakfast of hashbrowns, bacon, and eggs. I start with a cast iron skillit and two tablespoons of oil at medium heat. Once heated I shred one meduim potatoe and spread it out in the pan. I cook it untill it turns golden brown on both sides and remove to a warm toaster over. I then put in 4 slices of bacon cut in half and cook on medium until golden crispy turning often and then remove to the warm toaster oven. Finally I put in four medium to large eggs and cook turning once untill cooked but soft in the yolk. My wife and I share this hot meal with a cup of coffee about 5 to 6 days a week and never get tired of it. Nothing like fresh eggs.
