I recently found out that I was bamboozled with an EE roo and now I think I'm paranoid. Could I get some friendly internet confirmation whether or not my Beatrice is a girlie or not.

I'm sure she is, she just seems unusually confident for a hen, is on the larger side, and her waddle can compare with both my roos.

Also, any tips for having 2 roos in a flock? I'd rather not rehome either if possible. I'm mostly concerned for the girls once the boys start to go through puberty.

If it's not anywhere close to laying age, it's a cockerel. It has fairly thick legs and there would be more lacing on the breast if it were a pullet, in my opinion.

Regarding having two males in a flock, it depends on how many females and how much space you have. I would recommend having at least five for each, and as much space as possible, and maybe more than one feeding spot.
If they boys fight too much, it's best to sacrifice one of them, because they may hurt the hens with their competition and over mate with them.
