I have mutts, I am putting the mutt hens with my Ameraucana (when they hatch and grow some) but I don't want the mutt roos(4) breeding with my Ameraucana. Will they fight if they have their own coop/run without hens, or am I just asking for a LOT of noise and blood?

I think they would fight with each other. They fight with each other even when hens are around, so I don't think that would change if they didn't have hens around.
