That's the vent plug. In general, you shouldn't have to remove it. I do know a couple of people who have rigged a syringe or turkey baster to a tube to open the vent plug and put in to refill the water without opening the whole thing. I want to make one of those myself.

Congrats, Steve! Hovabator's are great for those of us who don't hatch tons of chicks at one time. I love mine - very stable and easy to use.
