I have an Easter Egger which I was told should be a hen. I have seen her or him start fights with our rooster with feathers sticking up on neck. Also starts fights with other hens. Is she a he or is this normal?

It is a very pretty girl!

You do not go by behavior for figuring out gender. It is quite obvious usually by feathers, coloring, comb and wattle.

Also by either a crow or an egg.

Hens fight and will kill things smaller then them. I watched my flock go postal on baby mice....
