Bell pepper harvest ~ preserving advice needed!

Hello, i harvested many green bell peppers. Can i simply slice them and freeze them? Can i use these later to make a stir fry or use them in my enchilada sauce? Thank you! I guess i'm wondering the best ways to preserve bell peppers. Just the green ones.

Freezing is simple to do. I've frozen them as slices or even in quarters. They won't be quite as crisp as fresh for stir fries but will work (try it anyway), they are wonderful for flavoring sauces.

Yes, that seems to work well.

I've done it with ripe peppers or green ones, and every dish I have cooked with them was fine.

I do the same…cut them into bite sized pieces and freeze. After defrosting, they’ll be a little softer, but I usually use them in chili or soup anyway.

I also wash, core (remove seeds), cut to desired sizes and freeze. I like the vacuum sealing when I freeze things.

They will still taste a lot better than store bought even if they aren't as crisp.
