Best breed for a beginner

Hi all
So i currently a small holding with ducks goats etc. We have just bought some more land elsewhere to do a self build house. We will be living onsite and really would love to get some geese for a few reasons really... for some security and guarding...breeding and selling hatching and eating eggs.

So my question is what is the best breed to get, we want to hatch our own so that the children and our animal loving border collie can get to know the goslings so the geese learn to not be nasty towards them.

I've done a bit of reading and thinking Chinese or Toulouse maybe??
Both relatively docile and make good pets, and I believe Chinese lay the most eggs ???
Is there any other breeds worth looking into ?
Any advice is appreciated
 
My only experience with geese is my current pair, Golly and Gussie. They are American Buffs that I bought as goslings last year. They are beautiful and sweet. Even as she's nesting, Gussie will still allow me to pick her up to move her. As I hold her, she will lay her head on my shoulder and relax. BTW, she has 11 eggs in her nest; I am waiting impatiently to see if they all hatch.

I know all birds are individuals, but I've read that Buffs tend to be docile. They are great alarm birds, get along well with my chickens and runner ducks, and have not attacked me, the other human member of the household or any of our visitors.
