If you're looking for birds that you'll breed, incubate, and hatch then I'd go with Rhode Island Red, Barred Rocks, and Easter Eggers. Maybe White Leghorns.
If you're looking for birds to order in chicks, brood, then sell as started pullets I did that this year. Took the started ISA Brown pullets I ordered from Townline and the Pear White Leghorn pullets I ordered from Murray McMurray to the swap last weekend and sold everything I had in less than an hour. Folks want proven egg layers that are old enough not to need to be kept in a brooder. Had a half-dozen other folks come ask after I sold the last of them. Next year I'll double those orders.
