Best egg layer breeds?

Here's the deal: Everyone say's how great GSL's and Leghorns are for laying an egg everyday. Breed charts also say how certain breeds lay everyday and some breeds only a few eggs a week.

So, why do my 2 Dominques and Cochin lay an egg each everyday? Charts do not agree with this.

Am I lucky? Do all young pullets lay their hearts off during their first year? Am I missing something?

I think climate, food, age, molting, and other environmental factors have an effect on egg-laying. With this said, it's hard to believe that egg charts and breed descriptions are absolute. My Barred Rock faithfully lays a large sized egg every single day, yet my Red Sex-Link, supposedly one of the most prolific layers, poops one out every 2-3 days if I'm lucky.
 
GSL is a gold sex link
All sex links are pretty good layers. They're mix breeds from two different high production pure bred chickens. There's a sticky on sex-links in the breed section.

Back on topic... I think that most birds are pretty prolific for the most part their first year then will taper off production after their first "season" of laying.
