Best Lawn Seed

We need to reseed our lawn after a tree crew ruined it. Husband wants it to look good after mowing. I want it as nutritionally diverse as possible as our birds are rotated over it (chickens, ducks and turkeys). I would love a one and done seed mix, but will buy separately. So far I have crimson clover and self heal. The bulk creeping thyme seeds on Amazon all seem sketchy. What else do you recommend?
I have buckwheat seed, but I believe that will grow too tall for regular mowing, right?

Buckwheat is an annual, and not a lawn grass. It will die at frost.

If you want a lawn, like everyone generally has, get some quality grass seed,, like Kentucky Blue grass. Or maybe a Tall fescue. These will make nice lawn to cut and enjoy. Then when dandelions self seed in the wind, allow them to grow. Don't use a herbicide, but do fertilize your lawn with just lawn fertilizer. (don't get Weed-N-Feed type)
If you want to feed your chickens greens, I suggest you plant separate small plots of your choosing.
Getting back to dandelions.. My chickens do snack on the leaves. They also nibble on other grass blades as well.
Clover generally grows when lawn is nitrogen deficient. I have clover, but don't see my chickens targeting it to eat.
