Best way to eat duck eggs

I am following. I would love people posting to say whether they use muscovy eggs or mallard-derived duck eggs, because they have quite different amounts of protein and fat, so should behave differently in recipes. Our muscovies have just started laying. The best thing I have done with them so far is to chop up bacon, fry it until almost cooked, turn off the heat and fry the muscovy eggs on top of the bacon, using the heat left in the pan. No rubberiness. Lovely yolks.
Not exactly a flash recipe, but winning with the texture.
