big incubater.not enough eggs

hi guys . i have incubater ( 300 egg ) .but i can get 300 egg on one time my chickens give me daily 7-8 eggs
- so Can I choose one temperature for the duration of the hatching period and without stirring
- or keep the eggs for 10-15 days and start hatching ( is it useful )
- any Thoughts

Have you done a test hatch yet?
A hen will accumulate eggs for 7+ days to get a nice size clutch. I've had egg sit on the kitchen counter for 30+ days without being turned and had a 30% hatch rate. Don't worry about older eggs.
You could also offer hatching service for others.
