Sorry I haven't been around but been fighting with glaucoma and my online time is limited lately. No worries, us old Irishmen bounce back pretty fast and hard.
My wife joined Weight Watcher's recently and since I AM the one that got her into this pickle it's now my husbandly duty to create some interesting and delicious dishes that are also WW Worthy... Hope you try this.
It's inspired by a recipe my old boss Carlo makes for himself, instead of using a Sicilian tuna packed in olive oil I opt for a lighter version that is quite good.
Mis en Place
3 5.5 oz cans of albacore tuna (packed in water, fully drained dry)
2 cups celery, fine dice
1 cup baby carrots, sliced very thin (or regular carrots, fine dice)
1 cup finely chopped italian parsley
1 14 oz can cannellini beans, rinsed and drained
juice of one large lemon
5 Tbls low fat italian dressing (wishbone works well)
fresh green salad, chilled
Combine first 4 ingredients and toss well, next add beans, lemon juice and salad dressing. Season with seasoning salt and fresh cracked black pepper. Put in food storage container and chill 2 hours, or eat it now.
You want the salad to have just enough dressing it's not really dry tasting - you don't want it all "italian dressing tasting" you just want it to have a tiny bit of zip to accentuate the already good flavors of the beans and tuna.
Plate 1 1/2 cups of salad greens, add 1 cup of the tuna salad mixture on top. Serve with your favorite low calorie spritz dressing. This is remarkably satisfying and yet is roughly 4 POINTS !!!
Blanche a bundle of asparagus and once drained season with S&P and lemon juice and it's now a very elegant main course. Vegetables rule when dieting !!
