Nothing like a BIG breakfast to make you feel like you're NOT dieting. LOL
You use a microwave omelette maker or a square microwave container and then fold the contents once coooked.

Mis en place:

1 egg white
1 whole egg
pinch of S&P
1 1/2 Tbls water

tiniest dab of butter (or cooking spray)

1 cup diced vegetables:
red bell pepper
sliced mushrooms
1 diced scallion
1/4 diced tomato

Preparation:

Rub microwave container with small dab of butter (or use your preferred cooking spray or spread). Lay vegetables into container so they are evenly distributed, season with a little seasoning salt and pepper.
Place eggs, water and S&P in medium bowl, add a pinch of dry herbs such as herbs de provence - whisk well with a fork for about 90 seconds. You want to incorporate a lot of air into the eggs.
Now genly pour eggs into microwave container, close it and microwave for 2 1/2 minutes. Let eggs rest covered about 45 seconds to finish cook. Plate and serve with sliced tomatoes seasoned with a little salt and one or two sprays of your favorite low cal spritz dressing. Very satisfying (in photo you see my breakfast with non-WW bagels).

Also notice the mother hen breakfasts: microwave cooked eggs, fresh romaine lettuce and grated carrot - the newborns devour this.

Cooking for the wife and myself and the brood of new mothers keeps me pretty busy. Who said being retired would be so, complicated ?? LOL
Yeah good thing you don't have to EAT off that microwave face... You have better eyesight than me obviously.

Nutrients from veggies are fat soluble. By skipping the one yolk and skimping on the butter you are kind of defeating the purpose of the vegetables.

If that were entirely true then my wife wouldn't be in the dilemma she has gotten herself in the last 3 years (since she met me and I started cooking for her).
This is really a challenge for me to cook well and make attractive and delicious dishes with fewer calories for her.
By using one egg white and one egg you get some of the satisfaction of the yolk but not the fat of TWO yolks... You can use a non-stick spray in place of butter, what I use is
so miniscule it is pathetic but I felt obliged to mention since without it the eggs would probably stick to the container and make quite a mess...

And yes, our hens are lucky - they get so excited when I bring them their little hen bento boxes... They scarf it down. Maybe that's why I have so many broody hens. LOL
