Bit off more than I can chew?

Thank you for all of your input. I do have several freezers, and the birds will be split between several families. I will likely combine several of your suggestions, including ice water, coolers and spreading things out. Those that are going to other house holds, I will pass on the information.

I have butchered 100 meat birds but like to split it up to 30 to 35 at a time. i also use three tubs of ice water. 1st one is for the birds after plucking. (i made a wiz Bang plucker and it works well). it starts to cool down the birds and also serves as first rinse. second tub is for after gutting. It continues cooling and rinses blood out. Third tub is for final rinse before bagging. I make sure that that each bird stays in each tub a minimum of 10 minutes. Then I put them in coolers to transport to the freezer. they come out tender and juicy
 
My boyfriend and I did 24 last year, we ordered 40 this year, and I thought I went a little crazy, were doing half one day and half another, I think we could have maybe done 30 in one day but that would be pushing it.
