I boiled some eggs today and I couldn't peel the shell off without destroying the egg. Why is this? I remember my dad saying something about what eggs are hard to peel? Does it have something to do with too fresh?

I have always heard that fresh eggs are hard to peel after being boiled. Personally, I have a method that always works for me, although I have read other great ways here on byc. Anyways, what I do is put the eggs in the pot and cover with water, turn on the burner, then pour a ton of salt over the eggs. When they are done, I immediately run cold water over them and they always peel perfectly for me... fresh or not! Good luck! :)

I saw a new trick to peeling boiled eggs and I tried it and it works perfect! Take a glass and put 1-2 hard boiled eggs in it and add enough water to cover the eggs. Place your hand over the top of the glass and shake like crazy for a few seconds, reach in and grab a hold of the shell and it will just peel off with no muss or fuss. I did it time and time again with the same results.

Boil eggs for exactly 12 minutes, no longer. Then empty water and gently shake the eggs in the pan to crack them a little. Add ice cold water and let sit for 20 minutes. The cold water penetrates the shell making them easier to peel. Fresh eggs can be a challenge to peel.

Your welcome.

Fresh eggs are definitely harder to peel when they're hard boiled! Easiest way I've found to combat the tricky peel is to shake a few tablespoons of baking soda into the water when you put the eggs in.
