Bone broth / stock recipes

Hi there, looking for advice on recipes for both bone broth and stock. I just dispatched my first birds 5 cockerels). Want to use all of the birds (heads and feet). Is there a need to skim off froth or similar for bone broth?
 
Bone broth is the exact same stuff as stock.
the person who decided to market stock as bone broth is a genius since thousands of people fell hook, line and sinker for the hype.
The froth on top is protein and collagen, it's not necessary to skim off.
Start with cool water and very slowly bring the heat up, you can do this in a pressure cooker if you want.
