The second one has a bit more of a candy topping. I was very happy with both

Ok

Double Pie Crust:

1 cup Shortening
2 1/2 cup All Purpose Flour
1 tsp Salt
1 cup Cold Water
Egg white

Apple Pie:
1 Double Crust Pie
1/2 cup Unsalted Butter
3 tblsp All Purpose Flour
1/2 White Sugar
1/2 cup Brown Sugar
1/4 cup Water
1 tsp Cinnamon
1/2 tsp Nutmeg
1 tblsp Vanilla
8 Granny Smith Apples (I pick ones with a little red/yellow on them so its not so sour!)

*Mix Flour, Salt, Shortening with fork till very crumbly
*Add water as needed to hold together (I slowly ad turn it and add water where there is more crumbs)
-Mix lightly with fork till ball forms
*Chill 30 minutes
*Cut ball in half
*Roll on floured surface with floured pin one crust at a time
-I go ahead and lay the crust in the pie dish and brush with egg white then I cut the lattice crust and lady it on a plate then put both back in the fridge

While the crust is chilling this is when I peel and slice my apples.
I slice my apples thin and long.
Then cover them and put in the fridge till I need them

1. Melt butter in sauce pan
-Stir in flour to form paste
-Add vanilla, white sugar, brown sugar, and water
-Bring to boil
-Reduce heat and let simmer

2. Fill pie with apples slightly mounding (pie crust should already be in)
-Pour part of the filling in
-Lattice Top
-Pour filling all over lattice (If you want a less candy like topping like the first pic add a TOUCH of water to filling and mix)
-Foil sides of pie

3. Bake at 350 for 45 minutes
-Remove foil from edges and bake another 15 minutes

Good luck!
