If you intend to eat every one of them, you might as well start with a couple of brood breasted whites. They grow quickly so they get into the freezer in a short time period, and they are easy to get along with. They dress out into a nice plump carcass with lots of breast meat. They are also cheaper to purchase the poults.
If you find that you really like having turkeys and want to keep a flock with some breeding stock, then you must choose a different breed. But by then, you should have a better idea of what you expect a turkey to do for you, what size you want, what color appeals to you.

If you intend to show turkeys, there aren't all that many varieties recognized for shows, so that will be a considerarion.
