BREEDING FOR PRODUCTION...EGGS AND OR MEAT.

We used to can a lot of venison until I got into making sausage and bologna out of the scrap meat. You don't have to be to particular on cleaning it up, shanks, silver skin whatever can be left on, it melts and floats to the top. When you open a cold jar just discard the chunk of tallow on top. Canned venison gravy on pancakes for breakfast mmm...

De Nada! Another favorite around here is chicken and dumplings canned in quart jars. Break out one of these, add celery, peas, and canned baby carrots. I also add a pint jar of chicken, some coarse ground black pepper, and some chunks of steamed potato. Pour in a pie shell and put a crust on top, then bake to brown the crust. The best chicken pot pie you ever tasted!

Will be glad when it is cool enough to turn on the oven and eat stuff like that again. Getting tired of hot weather food. My husband is wanting to make sure that I can up more apple pie filling this year when apples start going on sale. Have to say, having home canned apple pie filling has been a wonderfully quick dessert.
