I have a golden polish hen and a golden polish/Cochin rooster. If I breed these two will I get a purebred golden polish?

It might take several generations of breeding large numbers and culling. A rough guess would be it might take 10 years to accomplish.

"Purebred" in the poultry world means the bird represents well, say 94 points under the old system of judging, for the breed. This is called phenotype. What the bird looks like. Consult the Standard of Perfection for the bird. Look at photos of the breed winners from a dozen different poultry shows. This will give you a picture, in your mind's eye, as to how close or how far away your birds are.
