breeding rooster to dofferent breed hen?

I was just wondering...if you bred a rooster to a hen, but they were different breeds what would you get? For example...a barred rock rooster to a buff orpington hen? And what kind of crosses do you need to officially make an easter egger? or would that simple different breed cross create it? One more question...when an egg is fertilized, how long can you still eat it? My sis in law plans to add a rooster to her flock. She was curious if she would be ok to collect eggs and eat them...and how long are they good? Is daily enough?

Easter eggers To me are a cross of Ameraucana's and another breed or different color Ameraucana. On the eggs as long as you gather every day and put in the fridge then no worries. I have some eggs in the fridge that are about month old just made deviled eggs with them and they tasted really good. Just remember eggs from the store could be months old. I do crack eggs into a bowl before using but that is me. On the other breeds you would just get mixed breed chickens unless you use certain type of rooster over certain hens to get sex links.
