I have several breeds that I’ve read don’t breed true. Does this mean the peeps of their fertilized eggs will be sterile like a mule and unable to produce eggs?

Breeding true means a chick will look like it's parents, so not breeding true means the chick has something different from it's parents. Usually it's color that doesn't breed true if you are talking about a breed (instead of a cross-breed), but it could also be comb type, beard and muffs, number of toes, etc.
