What intervals should the eggs be turned...times range from 30-180mins with a default of 45mins

I've had success with the default turn interval of 45 mins. I think the turn amount is probably the thing you should pay attention to... and this depends on the diameter of your eggs of course.

I opt for the 60 minute interval on my Brinsea Adavance.

What angle should regular medium sized chicken eggs be set at? 5?

There's no Angle specifically, just a turn duration.

You can guesstimate an angle by drawing a vertical line from the pointy end to the blunt end, set this to top dead centre and then seeing where it ends up after the rotation completes. The actual amount will not always be consistent because of the shape of the egg and how it gets trundled along by the turning platen.
