broiler question

We have fifty broiler chicks orderd, due to arrive Friday. I was just reading in the Meyer Hatchery catalog about their feeding and care recomendations. (If you have the new catalog, look on pg.26). It says Broiler withdrawal from 3 weeks until butcher. What does that mean? No food for the last three weeks? Surely not?
