My broody hen has kicked an egg out of her nest. I candled it and it appears viable. I have an incubator that I can put it in. However, I don’t know how long she’s been sitting on these eggs.

She went into hiding and when I found her she was already sitting on a clutch of eggs, so I can’t be for certain the exact day she started brooding, but I am within a two/three day margin.

My question is how do I know when to do lockdown and when to up the humidity? Is it better to do it sooner or later? My estimation is that we are currently somewhere between Day 17 and Day 19.

Since turning is really less important toward the end of incubation, I'd lock down earlier...today, even. How do the air cells look? Unless they're huge already, you may want to consider leaving the humidity at regular incubation levels and not upping it until you see pipping (I do this). Best of luck with your hatch!
