Broody hen question

I have a splash Americana that is broody. This is her second time broody in two years. He broke her from broodiness the first time but this time we want chicks. Am I able to give her just one chick? Or will the chick be lonely or abandoned? I will have her sit on unfertile eggs for 21 days and then slip the chick under. Will this be ok? Will she accept the chick?
