So starting about a day ago one of my BR hens has started walking around puffed up and today she was ticking at me when I tried to collect eggs. She is also doing the broody scream but about half my hens do it whether or not they are broody. But she isn’t staying on the nest so I’m not sure what to think. She also started a fight with the rooster this afternoon and has been in a horrible mood since then.

Also if she is broody how many eggs should I leave her? She’s a small BR.

If she isn't in the coop sitting on the eggs she's probably not broody. She might be becoming broody, though, or something like that. I suggest you keep an eye on her.
And I'm not sure how many eggs you should leave her-
it sort of depends on the size of the eggs.

How many eggs depends on how many chicks you want, if you don't need any or don't have a roo, then just keep shooing her out of the nest box. She sounds like she's becoming broody.

I don’t mind chicks so I’ll leave her as many as she can hatch and we actually have too many roosters lol. Any extra roosters will be going in the soup pot after the last batch. I’m actually hoping for a broody or two since I’m hoping for a self sustaining flock.

Don't give her eggs until you're sure she's broody....on the nest day and night for 3 solid days
Need to decide how you want to manage her incubation, I like to separate them in the coop with wire wall(4x6 area) and a floor nest to simplify things.
