Broody

When will a hen go broody mine just started laying and some are Orpingtons an I know yet can be really broody

It all depends on the individual bird. Some birds, even in really broody breeds, never go broody. Others will go broody often, even after laying the first few eggs, and even if they are not from a broody breed. You just can't tell for sure.

So if I see one of my girls sitting on eggs and won't move she might be broody then

Might be, might not be. She might be just laying a egg. Now if she is on a nest---you check again in a couple hours and she is still there, Hours later she is still there and she sleeps there---She puffs up at you and tries to peck your hand off----She is Broody. Now if you want her to continue setting/hatch you some chicks---then how you set her or what you do will determine if she will have a better hatch.
