Just got my first goose back from the processing place. VERY happy with how it turned out.
I was parting it up to freeze and found this cluster of (?) in the clavicle area, between the skin and meat. Are these some kind of oil glands? There were probably 8 to 10 of them and they were about an inch long. Is the neck ok for stock as long as i've removed these? And the fat ok to render?

I have only processes ducks, but haven't seen this before. But i personally would cut them loose and render my fat. It all looks clean and healthy. If i were to make a guess it would be a glandular thing.... just make sure your life insurance policy is up to date! ;)

These mystery things have stumped quite a few people! I cut away the area they were in and proceeded as I would forca duck. Can't wait for holiday goose meals!

i have cleaned a few geese (all wild, so snow/Ross and Canada geese) and i have never seen that in a goose before.
