Butchering Turkey help

On an impulse I got some turkeys this year. Ready to butcher them they are huge and gobbling the food like crazy.

anyhoo, I have done chickens but I tend to just skin them. What is the best way to process a turkey? Anyone have pics too. Thanks for any help these babies are monsterous.
 
We skin ours, waste the wings at the first joint, butterfly and fry the breast meat and cut up the rest for the crockpot/soups/casseroles/stuffing/etc. If I were going to roast one, I would pluck it dry, cut off the wings at the first joing and cook as usual.
