Oh dear, you sure du have a lot of questions! ^^
Territorial - yes, they are, but in general not towards their partners. I think they'd be more likely to panic if their partner was out of sight on a different level than they'd be likely to fight when near each other. Just introduce both birds to the cage at the same time, there should be no issues.
In my experience, my buttons don't use hideaways that only have one small opening. I just looked at some pics of those KNUFF things and it looks like you could put them together without the short piece that goes in the front? That would give you a large opening and a few branches in the middle would make it more private while still allowing for a large opening on either side. It it was me though, I might opt for only using the sides of the magazine holders and use them as shelves - that would allow you to put them at different hights and see what the birds prefer, and there wouldn't get poop stuck to the lower part.
With regards to grit, that depends on the sand you use. If it's very fine you'd need to add grit (only necessary if you give them seeds though - crumbles are water soluble), if it has larger pieces and different shapes they'll be fine. And yes, you can put the grit in the sand.
Color mutations, as far as I've been able to find out:
Dominant:
Golden Pearl, Pied(tuxedo) - actually co-dominant, Blueface
Recessive:
White, Silver, Cinnamon, Red breasted
Lethal genes - golden pearl
