Do you guys think it will work if I just buy fertile eggs online and then once they arrive, have my hen sit on it? Will she even sit on eggs that are not her own?

If she's broody, She should. How long has she been broody?
Well, she hasn't shown any signs of wanting to sit in her nest and tend to it..... I was just curious if the method of buying eggs online and having your hen sit will work, just in case one day I would like to try that route. For now I'm hoping she lays eggs soon, previous owner told me she's close to being due a clutch of eggs, but who knows, either way my male now has been doing the dirty deed so we shall see if there will be eggs.

I'm sorry, but if your hen is not broody to begin with, she is not going to brood a clutch of eggs. A hen doesn't know the difference be a fertilized and unfertilized egg.

But do you think once her first egg drops, her instincts will kick in and she will start to sit? Right now I have the nesting box set up and everything but I haven't seen her show much interest in it.

BTW, she's not an egg-layer type chicken...... her breed is Shamo / Oriental Gamefowl variety, if that matters.

Will not work, you'll waste time and $$.
Only a SERIOUSLY broody hen will set and hatch out eggs.
I see you have have a Shamo, they are notoriously broody. Wait, leave some eggs in her nesting box. When she will not leave the nest, puffs up and wants to fight if you try to move her, doesn't leave it only rarely to eat or drink and then returns to the nest and sets on the eggs all day and night long for a week.
THEN, buy some eggs if you want. She will sit on whatever you put under her.
Chicken eggs hatch in 21 days, she will sit until they hatch if she's broody, adding a week or two will not bother her. Make sure she is good and broody then replace her eggs with those you want her to hatch.

Shamos have a high tendency of going broody so she probably will brood them. The Shamo hens are not good at brooding chicks though since they happen to be clumsy and their spurs could cause trouble.
