Brine it, baby. I'll prep breasts in a vacuum seal bag with some brine the night before I plan to cook with it to get some moisture into them. Way better taste and texture. Even without a vacuum sealer, just an overnight soak in some kind of brine (or like italian dressing) will help a whole lot.Their isnt a part of a chicken i havent tried lol my favs are wing flats, legs and thighs i hate breast meat its so dry except on my own birds because i process at 8-10 weeks.
I cant do brines esp if salt is involvedBrine it, baby. I'll prep breasts in a vacuum seal bag with some brine the night before I plan to cook with it to get some moisture into them. Love dark meat, liver, kidneys, and testicles.
Even something like a no salt chicken stock would work. The moisture is the key. What goes in the moisture is up to youI cant do brines esp if salt is involved
