Caesar's Salad

    I know I'm doing well when my wife tells me that she'll never order Caesar's Salad out in a restaurant again... (and this is a woman who's had her share of fancy NYC restaurant dinners)... Indulge yourself and someone you love. Make it like we do, in a decent sized bowl, we share it right outta the bowl (we're honeymooners).

    The story goes that this was originally invented by a chef in Tijuanna named Caesar Cardini. He made it for some aviator friends who used to stop in a lot. He called it the Aviator Salad after them. It got to where everyone heard about it and came in ordering "Caesar's Salad". Of course I am sure you've heard lots of stories but this is the one that sticks for me.

    A couple of fine points to follow:

    use the lighter colored part of the romaine hearts
    soak those hearts for quite a while in a big bowl of ice water, then drain well.

    Follow the food safety precautions in the Caesar Salad Dressing Recipe (PLEASE !!)

    Mis en place:

    2 hearts of romaine, quenched and drained, cut in 1 inch pieces
    3/4 cup Caesar Salad Dressing https://www.backyardchickens.com/forum/viewtopic.php?id=167469
    1
    cup homemade croutons
    1 cup fresh grated reggianno parmesan


    Arrange drained romaine pieces in bowl, add dressing, toss well. Check for flavor, is it enough dressing, if not add more. Now season with some fresh cracked pepper. Add parmesan cheese and croutons, Toss again and serve.
