Thanks for the tip on the oven light, our house is 68°F during the day and 60°F at night.

Do you use 1 to 1 by weight or volume?

Volume ( I think?) 1/4 cup to a 1/4 cup or 1 Tablespoon to 1 Tablespoon. My friend told me that she feeds it however much the recipe is going to have her use, so if it calls for a 1/2 cup of starter she would feed it 1/2 cup flour and 1/2 cup water.

Our oven light makes too much heat and got the starter to 110°F so I think she is going to start over with the feeding. I guess I'll use my beer fermentation box as a proofing box or if your English a proving box.

Our UPS driver has been working very late as well. Yesterday he delivered a package at 5:30 and then I saw your post and thought I should also do something to express our gratitude. Turns out our order got divided into 2 shipments, so he's coming back this evening.....I baked him some cookies, frosted, decorated, and will leave a thank you note attached to them.

Well we are starting over again with the sourdough starter now that she has a bit of experience under her belt. The fermentation chiller turned into a proofing box seems to be working well.

Our electric co-op gave us a $126 rebate! They said don't expect it every year, but there was one last year as well...
