Just cause their calm, doesn't mean they aren't loud.

Take a pekin. They are calm, but very LOUD!

Personally, I would go with WH, or Cayuga. My WH (Welsh Halrequin) Will follow me around like puppies, and be at my feed all the time. I had a cayuga drake who did the same. I love the WH though. VERY good layers. And only quack when they see me with a treat, or snack, and if a drake is running them down to mate with them.

My Silver Appleyards are very laid back. However, they really blast out a loud quack. A foghorn's got nothing on an Appleyard.

My blue Swedish are higher energy. They aren't fearful, but I wouldn't call them calm and I've had Swedish from a hatchery that were in a constant state of panic. Their voices aren't as loud, but they quack more frequently.

Most duck noise is a sort of low murmur. But they do break out the ear splitting quacking on a regular basis. It's mostly when they hope they see food coming, or they want out, or they think they can nag me into giving them fresh water. ie: every time they see a person.
