Can a hen change her egg color?

Can a pullet that has laid brown eggs every single time for months suddenly lay a bright white egg?

Possible, but not very likely. The brown color is put onto the white egg as it passes through the hen's oviduct, so, it's possible for it to pass without any added color, but highly unlikely.
