Can a hen lay more than 1 egg per day?

Here is my question: I currently have 8 RIR's. I usually collect my eggs by noon and then at the end of the night around 9pm. Today at 11:30am I found 1 egg in one box and there were hens in the other two so I left them alone. Tonight, I collected 8 more eggs. I am positive there were no eggs in the boxes last night when I closed the coop up. Is it possible for one of the hens to have layed two eggs today?

I'm sure it's possible, especially if the timing was conveniently close for when you came to gather them. She must have just laid the second one.
